CHRYSALIDE announces its opening, and with it an unprecedented gastronomic proposition: a cuisine of the shell, where every dish is cooked under a crust — salt, clay, puff pastry, coffee — and revealed at the table in a gesture shared between the chef and the guest.
In an intimate setting of about thirty seats, Chrysalide offers two menus served exclusively at dinner: the Menu Chrysalide (€75) and the Menu Éclosion (€121). Each plate is built around ingredients from the south-east of France, sourced from committed producers and in strict respect of the seasons.
